Berry & Chocolate Oatmeal Brûlée

One of L's inventions, this is definitely one of our favorite breakfasts. It's perfect for a late brunch on slow mornings. We had to figure out how to use the broiler in our new oven- we'd never had one with a Hi/Lo setting. We tried this recipe on "low" for about 3 minutes, and it worked out wonderfully. I mean, LOOK HOW TASTY THIS LOOKS.

When it comes to cooking breakfast, sometimes simple and easy is better. Morning is not the time for stress and tension. There's no shame here for using frozen berries, instant oatmeal, and whatever dish you have handy that works in a broiler. Before starting, we noticed we were out of chocolate chips (OH NO). But a handful of roughly chopped milk-chocolate nut clusters worked just as well.

Berry & Chocolate Oatmeal Brûlée

Ingredients:
  • 4 fairly big ramekins (Single-serving baking dishes, about 1 cup each), OR a 1-quart baking dish. Note that whatever you use should be broiler-friendly.
  • 2 cups of Instant Oats
  • just a li’l Butter (to grease the dish[es]- you can also use the sprayable oil stuff)
  • 1 cup of Fresh or Frozen Berries (we used a mix of raspberries, strawberries, blackberries, and blueberries)
  • 1/2 cup of Chocolate Chips
  • 1/4 cup Brown Sugar
  • 1 tsp of Cinnamon
Directions:
  1. Grease the dish(es) with butter.
  2. Cook the oatmeal on the stove, according to the directions.
  3. Dump in the berries and chocolate chips.
  4. Stir it around on low heat, until the berries soften and the chocolate chips have melted.
  5. Plop all that goodness in the baking dish(es), and top it with the brown sugar and cinnamon.
  6. Place in the broiler for about 3-4 minutes, just until the topping gets crispety-crackly. If you see bubbles boiling on top, it's ready to take out.
