Blueberry Irish Soda Bread Muffins

We love making Irish soda bread- this recipe lets you take it along as a portable breakfast! The blueberries can be substituted with caraway seeds or your favorite dried fruit. We used a mix of whole wheat and white flour, but trying different combinations of flour will give you different bakes and consistencies.

J got to tour a farm in Ireland once, and part of the visit included making Irish soda bread in the farm's large kitchen. According to the farmer, the final step was to add "a bit of butter and jam, and you're in business." Can't argue with that.
 

Blueberry Irish Soda Bread Muffins

Ingredients:
  • ​1 cup white flour
  • 1 cup whole wheat flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 Tbsp. fat-free Greek yogurt
  • 1 cup buttermilk (OR 1 cup milk + juice of 1 lemon)
  • 3 Tbsp. agave syrup or honey
  • 1 egg
  • 1 Tbsp white or wheat flour
  • 1 cup fresh blueberries
Instructions:
  1. Preheat oven to 375°F.
  2. ​In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Using hands or a pastry cutter, incorporate Greek yogurt until mixture becomes crumbly. 
  4. In a small bowl, beat together egg, agave, and buttermilk.
  5. Pour wet mixture into dry mixture, stirring gently to combine. Dust blueberries with flour and stir in gently.
  6. Place batter into greased muffin tin, and bake for 25 minutes.
