A Man, A Plan, And Some Seitan (Seared Seitan with White Wine Mushroom Sauce)

This one was a bit of a challenge. We've never tried making seitan before, and weren't sure what to expect. But the experiment turned out well, and we'd definitely make it again! Now that we know what we're doing, we've put together a recipe we think you'll love. We paired it with some broccoli on the side, but it works well with lots of different vegetables or side dishes.

Seared Seitan with White Wine Mushroom Sauce

Ingredients:

Seitan:
  • 2 slices Wheat Bread
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 1 TBSP Worcestershire Sauce
  • 2 tsp. Tomato Paste
  • 1 cup Water, divided into 2 halves
  • 1 tsp. Salt
  • 2 cups Wheat Germ or Vital Wheat Gluten
Mushroom Sauce:
  • 1 Shallot, diced
  • 1 cup Vegetable Broth
  • 1 TBSP Honey Mustard
  • 10 oz. Portobello Mushrooms, sliced
  • 1 TBSP Parsley, chopped
  • 1/4 cup White Wine
  • 1/2 tsp. Black Pepper
Instructions:
  1. Preheat oven to 350°F.
  2. Tear up bread slices into small chunks and put in blender- pulse until they're fine crumbs. Place in a large bowl and set aside.
  3. Sauté onions and garlic in a large skillet on medium-high heat, until soft. 
  4. Place onions, garlic, Worcestershire sauce, tomato paste, 1/2 cup water, and salt in blender. Purée until a smooth liquid.
  5. Pour liquid mixture over bread crumbs, stir to combine. 
  6. Knead in wheat germ until mixture becomes a formable dough. Separate into 4 patties.
  7. In a lightly oiled skillet (you can use the same one for this whole dish), sear the patties on high heat for 2-3 minutes per side, or until browned.
  8. Pour 1/2 cup of water on a baking sheet, and place patties on sheet. Bake for 40 minutes, rotating after first 20 minutes.
  9. While the seitan is baking, sauté the shallot in large skillet on medium-high heat until soft.
  10. Add vegetable broth, honey mustard, and parsley, bring to a boil.
  11. Add mushrooms and white wine, simmer for 8-10 minutes (until mushrooms are fully cooked).
  12. Season with pepper, and serve over top of the seitan.
