Slow-Cooker Minestrone

Y'all, slow-cooker recipes are just the best. There's nothing like prepping a few ingredients in the morning, then coming home at the end of the day to a house filled with delicious smells, and a real, ready-made meal in the pot.

Slow-Cooker Minestrone

​Ingredients:
  • 1 onion, diced
  • 3 Carrots, chopped
  • 3 Celery stalks, chopped
  • 1-2 TBSP minced Garlic
  • 1 28oz. can Crushed Tomatoes
  • 1 14oz. can Chickpeas
  • 4 cups Vegetable Broth
  • 2 tsp ground Thyme
  • 2 tsp dried Basil
  • Salt and Pepper, to taste
  • 8 oz. Pasta (ditalini or spiral egg noodles, definitely optional- leave out for vegan version)
​Directions:
  1. Toss all ingredients except pasta into slow-cooker and stir to combine, place on low setting for 6-8 hours.
  2. Within last 15 minutes of cooking time, stir in pasta. Adjust seasonings to taste.
